Ginger Pineapple Cashew Fried Rice

Easy way to make your dinner colorful and yummy to eat. The pineapple adds the slight sourness in the meal and the color is so vibrant. The cashew nuts are great substitute for protein, but as all recipes you are welcome to substitute certain ingredients, you can add shrimp or some meat.



Ingredients:
1 1/4 cup Basmati rice ( OR other long - grain rice)
1 1/3 cup water
2 tablespoons vegetable oil
2 tablespoons peeled and grated fresh ginger
3 green onions, finely chopped
1/2 pound fresh snow peas (it can be substituted)
1 carrot, peeled and julienned (again can be replaced with something else)
salt to taste
1 teaspoon toasted sesame oil
1 cup diced fresh pineapple
1/2 cup cashew nuts

Preparation:

Rinse the rice until the water runs clear. Place the rice and water in a large saucepan and bring it to a boil. Cover, reduce the heat to low and cook for approximately 15 mins. Remove from heat and set aside. Heat a wok over medium heat until very hot but make sure it doesn't catch on fire, then pour oil into the wok and tilt it so all sides are coated with the oil. Add ginger, green onions, snow peas, carrots and salt, and stir-fry for 2 minutes. Add the sesame oil, pineapple and cashew nuts, and stir-fry another 2-3 minutes. When ready serve hot and enjoy the dish.
