Masman Thai Curry

I made some "Masman Thai Curry" last night it was amazing. I know my husband really enjoyed it, here is the recipe for it:



Ingredients:
50gms Masman Thai curry paste
4 pieces of chicken thigh or breast
1 green bell pepper
1/2 onion
1 tomatoe
1 large potato
1 carrot
2 tbsp vegetable oil
1 can coconut milk
2 tbsp of cayane pepper for more heat [optional]

Stir fry the masman curry paste with 2 tbsp vegetable oil in a sauce pan or deep pot. Add onions cook for a minute and add 1/2 can of coconut milk let it cook for another 2 minutes. Now add the chicken and the cayanne pepper, cook for 5 minutes cover the pot while cooking. Stir occationally to make sure it doesn't burn. Add the remaining vegetables and the remaining coconut milk cover the pot and cook until the chicken and the vegetables are cooked. Serve with warm Jasmine rice and garnish with thyme leaves or chinese parsley.
